An herbaceous perennial growing to approximately 1m tall with large green heart-shaped leaves on upright fleshy stalks.

Taro is grown in many countries for its edible starchy corms which are roasted, baked, steamed or boiled before being eaten. Taro is not eaten raw due to the presence of calcium oxalate crystals which can cause mouth and stomach irritation. Cooked taro has a starchy, nutty, slightly sweet flavour. Depending on the variety, taro flesh can vary in colour from creamy white or speckled to pale pink and even purple. Young taro leaves and stems can be eaten like spinach after being well cooked.

*Notes:

Taro grows well in warm to hot, frost-free areas in a sunny or partly shaded position. Protect plants from the hot afternoon sun and keep them well-watered as dryness stops or slows down growth.

Plant small corms 5cm deep and space plants about 60-90cm apart. The plants and corms are damaged by cold or frosty weather, so it is often grown as an annual in temperate climates.

Taro needs a long growing season, about 6 to 8 months, before corms are large enough to harvest. Harvest corms in autumn when the leaves begin to die down. Taro won’t store for more than a month, so they are best cooked and eaten when freshly dug up.

Note: Handling taro can cause skin irritation, so wear gloves and wash hands well after planting, harvesting or preparing taro.
