Closely related to leek, elephant garlic can produce very large bulbs with white skin, each bulb having 2 to 5 cloves. The large cloves have tan skin and a mild flavour between true garlic and leek. Cloves are easy to peel and can be roasted whole, sliced and added to salads or chopped and used as an onion/garlic substitute.

Plants have broad blue-green leaves with a central rib and tall flower stalks topped by large spheres of pink or purple flowers in summer. Plants produce numerous small bulbils around the main bulb; these can be eaten or planted to produce bulbs over two seasons. May grow a 'round' (single round clove) in the first year and flower and form bulbs in the second year. Plants will form a large clump over time. Very easy to grow and suitable for all climates including subtropical and tropical zones. Also known as 'Russian Garlic'.

Plant cloves Autumn and Spring (cold climates), Autumn, Winter and Spring (subtropical and tropical climates). Harvest after flowers begin to dry. Stores up to 8 months.
