Banana shallots, also known as French Echalions, are a cross between an onion and a shallot. The elongated bulbs with pointed ends are the largest of any shallot, with a smooth skin that's easy to peel. The firm white flesh has a milder and more subtle taste than onion and can be used raw or cooked in sauces, meat dishes and soups. The tops of the green leaves can also be eaten like a spring onion, leaving at least half the height to provide energy for the bulbs to grow. Shallots can be stored for up to 6 months after harvest.

Shallots are members of the Allium family and grow as a clump (or 'set') loosely attached at the base. If you have struggled to grow onions in the past, shallots are more forgiving and will not disappoint, each bulb multiplying from one bulb to 5-12 shallots in 13-18 weeks.
